Depends on which language do you prefer. The general documentation
specific for typesetting in particular language can be obtained by:

yum install texlive-collection-<language>

where <language> is one from:

arabic
bulgarian
czechslovak
dutch
english
finnish
french
german
chinese
italian
japanese
korean
mongolian
polish
portuguese
russian
serbian
slovenian
spanish
thai
turkish
ukrainian
vietnamese

A general rule is when you need a documentation for a particular
package then first check whether yum install texlive-<package>-doc
works and it will for most of the cases.

Installation of all documentation is generally wasteful as it is more
than 60% of the total TeX Live RPM packages and likely more in
expanded state.
